Tortillas use heirloom corn imported from Mexico which is nixtamalized,

milled and baked by Masafina in London; they also supply the Sonora-style tortilla in our crunch wrap, 

which is made with regenerative wheat from the Cotswolds.

 

Eggs are from free-range hens raised here in Kent.

Meat is high-welfare, pasture raised and fed on natural diets; our butchers are HG Walter and Swaledale
